Ingredients

For the Hot Chocolate:

- 2 cups unsweetened almond milk (or any nut milk of your choice)

- 1 cup light coconut milk (from the can)

- 1/4 cup unsweetened cocoa powder (or raw cacao powder)

- 2 tablespoons pure maple syrup (adjust to taste)

- 1/4 teaspoon vanilla extract

- Pinch of sea salt

For the Honey-Sweetened Marshmallows:

- 1/2 cup filtered water, divided

- 2 tablespoons grass-fed gelatin

- 1/2 cup light-colored honey

- Pinch of sea salt

- Optional: 1 tablespoon arrowroot powder or cornstarch for dusting

Instructions

Step 1: Prepare the Marshmallows

1. Dissolve Gelatin: In a small bowl, combine 1/4 cup of filtered water with the gelatin. Let it sit for about 5 minutes to bloom.

2. Heat Honey: In a saucepan, heat the remaining 1/4 cup of water and honey over low heat until warm (not boiling). Stir until well combined.

3. Combine: Add the bloomed gelatin to the honey mixture and stir until completely dissolved.

4. Whip: Pour the mixture into a stand mixer and whip on high speed for about 10 minutes until fluffy and light.

5. Set: Transfer the marshmallow fluff into a greased pan and spread evenly. Let it set at room temperature for at least 2 hours or overnight for best results. Dust with arrowroot powder if desired.

Step 2: Make the Hot Chocolate

1. Heat Milk: In a medium saucepan, combine almond milk and coconut milk over medium-low heat. Warm gently until steaming but not boiling.

2. Mix Ingredients: Whisk in cocoa powder, maple syrup, vanilla extract, and sea salt until fully combined and smooth.

3. Serve: Pour the hot chocolate into mugs and top generously with the homemade marshmallows.

Tips for Enjoyment
